Vanilla Sugar Cookies Recipe

Vanilla Sugar Cookies Recipe for Soft Buttery Cookies Everyone Will Ask You to Make Again

Few homemade desserts are as timeless and comforting as classic vanilla sugar cookies. With their buttery texture, delicate vanilla flavor, and sparkling sugar coating, these cookies strike the perfect balance between soft, tender, and lightly crisp around the edges. They are simple enough for beginner bakers yet delicious enough to become a staple recipe you return to over and over again.

  • Total Time: 25 Mins
  • Yield: 2 dozen

Ingredients

  • 1 ¾ cups all purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • ½ tsp vanilla extract
  • ½ cup granulated sugar for rolling the cookies

Instructions

Step 1: Prepare Your Baking Sheets and Oven

Start by preheating your oven to 350 degrees Fahrenheit. Preparing the oven in advance ensures the cookies bake evenly once the dough is ready. Line your baking sheets with parchment paper to prevent sticking and to help the cookies bake with a smooth bottom surface.

Using parchment paper also makes cleanup easier and prevents excessive browning on the bottoms of the cookies. If you do not have parchment paper, a silicone baking mat can also work well.

Allowing the oven to fully preheat before baking is very important. Placing cookie dough into an oven that has not reached the correct temperature can affect texture and spread.

Step 2: Combine the Dry Ingredients

In a medium sized bowl, add the all purpose flour, baking powder, salt, and baking soda. Whisk everything together until evenly combined.

This step helps distribute the leavening agents throughout the flour mixture so the cookies bake uniformly. Properly mixing the dry ingredients also prevents pockets of baking soda or salt from appearing in the dough.

The baking powder and baking soda work together to create cookies that are soft and tender while still maintaining structure. The salt enhances the sweetness and deepens the buttery vanilla flavor.

Set the bowl aside while you prepare the wet ingredients.

Step 3: Cream the Butter and Sugar

In a large mixing bowl, add the room temperature butter and granulated sugar. Using an electric mixer, beat the mixture together until it becomes light, fluffy, and pale in color.

This process is extremely important because it incorporates air into the dough, helping create a lighter cookie texture. Properly creamed butter and sugar should look smooth and fluffy rather than dense or grainy.

Room temperature butter works best because it blends evenly with the sugar. If the butter is too cold, it will not cream properly. If it is melted, the cookies may spread too much during baking.

Take your time with this step because it lays the foundation for the final cookie texture.

Step 4: Add the Egg and Vanilla

Once the butter and sugar mixture is light and fluffy, add the egg and vanilla extract. Continue mixing until fully incorporated.

The egg helps bind the ingredients together while also contributing moisture and richness. The vanilla extract gives the cookies their signature warm flavor and aromatic sweetness.

At this stage, scrape down the sides of the bowl with a rubber spatula to ensure everything is evenly mixed. A properly blended mixture creates a smoother dough and more consistent cookies.

The batter should now appear creamy and silky.

Step 5: Incorporate the Dry Ingredients

Gradually add the dry ingredient mixture into the wet ingredients. Mix on low speed until the dough just comes together.

Avoid overmixing at this stage because too much mixing can develop excess gluten in the flour, leading to tougher cookies. The dough should look soft, smooth, and slightly thick.

If needed, use a spatula to gently fold in any remaining flour from the bottom or sides of the bowl.

The finished dough should be easy to scoop and shape without being sticky or overly dry.

Step 6: Shape the Cookie Dough

Place the additional granulated sugar into a small bowl. Scoop portions of dough and roll them gently between your palms to form evenly sized balls.

Roll each dough ball in the granulated sugar until fully coated. This coating creates the beautiful sparkly exterior that gives sugar cookies their classic appearance and slight crunch.

Arrange the dough balls on the prepared baking sheets, leaving enough space between them for spreading during baking.

Keeping the cookies uniform in size helps them bake evenly.

Step 7: Bake the Cookies

Place the baking sheets into the preheated oven and bake until the cookies are lightly golden around the edges.

The centers should still appear soft when you remove them from the oven. The cookies will continue to firm up slightly as they cool on the baking sheet.

Be careful not to overbake them because sugar cookies can quickly become dry if left in the oven too long. The goal is a soft center with delicate golden edges.

Depending on your oven, baking times may vary slightly, so keep a close eye on the first batch.

Step 8: Cool Before Serving

Allow the cookies to cool on the baking sheet for several minutes before transferring them to a cooling rack.

This resting time helps the cookies set properly and prevents them from breaking apart while still hot.

Once fully cooled, the cookies will have a tender texture with lightly crisp edges and a buttery vanilla flavor throughout.

Serve them immediately or store them in an airtight container to keep them soft and fresh.
