- 2 to 3 tbsp brewed coffee

Instructions
Start by preheating your oven to 350°F or 175°C. Line a square baking pan with parchment paper, making sure there is some overhang on the sides. This will make it easier to lift the brownies out once baked.
Lightly grease the parchment paper to prevent sticking. Proper preparation at this stage ensures clean edges and an even bake.
2. Melt Chocolate, Butter, and Coffee Together
In a heatproof bowl, combine the bittersweet chocolate, unsalted butter, and brewed coffee. Place this bowl over a pot of simmering water, creating a gentle double boiler setup.
Stir continuously until everything is melted and smooth. The coffee enhances the chocolate flavor rather than overpowering it, creating a deeper and more complex taste.
Once melted, remove from heat and let it cool slightly so it does not cook the eggs in the next step.
3. Whisk Eggs and Sugar
In a separate bowl, whisk together the eggs and granulated sugar until the mixture becomes slightly thickened and pale in color. This step helps create structure in the brownies while maintaining a soft and fudgy texture.
Add the salt and mix until combined.
4. Combine Wet Ingredients
Slowly pour the melted chocolate mixture into the egg and sugar mixture. Stir gently but thoroughly until fully incorporated.
Make sure the chocolate mixture is not too hot when adding it to the eggs. If it is too warm, it could scramble the eggs and affect the final texture.
5. Add Dry Ingredients
Sift together the all purpose flour and cocoa powder. Gradually fold this into the batter using a spatula.
Mix just until no dry streaks remain. Overmixing can lead to tougher brownies, so keep the folding gentle and minimal.
6. Transfer Batter to Pan
Pour the batter into your prepared baking pan and spread it evenly using a spatula. Tap the pan lightly on the counter to remove any air bubbles.
