For the Cheesecake Filling

  • 3/4 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened at room temperature
  • 2 eggs
  • 1 cup semisweet chocolate chips, melted

Instructions

Step 1: Prepare Your Baking Pan and Oven

Start by preheating your oven to 350°F or 175°C. Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides. This will make it easier to lift the brownies out once they are baked.

Lightly grease the parchment paper to prevent sticking. Proper preparation at this stage ensures clean edges and easy removal later.


Step 2: Make the Cheesecake Filling

In a medium mixing bowl, add the softened cream cheese. Beat it until smooth and creamy, ensuring there are no lumps.

Add the egg, granulated sugar, and vanilla extract. Mix until everything is fully incorporated and silky in texture.

Fold in the crushed Oreo cookies gently. Make sure the crumbs are evenly distributed throughout the mixture. Set this bowl aside while you prepare the brownie batter.


Step 3: Melt the Chocolate Chips

Place the semisweet chocolate chips in a heatproof bowl. Melt them either in the microwave in short intervals, stirring between each interval, or over a double boiler.

Once melted, set the chocolate aside to cool slightly. It should still be fluid but not too hot when added to the batter.


Step 4: Prepare the Brownie Batter Base

In a large mixing bowl, combine the softened butter and granulated sugar. Beat them together until the mixture looks light and creamy.

Add the eggs one at a time, mixing well after each addition. This step helps create a smooth and stable batter.


Step 5: Incorporate the Melted Chocolate

Pour the slightly cooled melted chocolate into the butter, sugar, and egg mixture. Stir until everything is well combined and glossy.

This is where the batter begins to develop its rich chocolate flavor and signature brownie texture.


Step 6: Add Dry Ingredients

In a separate bowl, whisk together the flour, cocoa powder, and salt.

The batter should be thick, smooth, and evenly chocolatey.


Step 7: Assemble the Layers

Pour about two thirds of the brownie batter into the prepared baking pan. Spread it evenly using a spatula.

Next, pour the cheesecake mixture over the brownie layer. Spread it gently to create an even layer.

Drop spoonfuls of the remaining brownie batter on top of the cheesecake layer.


Step 8: Create the Swirl Effect

Using a knife or skewer, gently swirl the brownie batter into the cheesecake layer.

Do not over swirl. A few gentle motions will create a beautiful marbled effect without blending the layers too much.


Step 9: Bake to Perfection

Place the pan in the preheated oven and bake for about 35 to 40 minutes.

The edges should be set, and the center should have a slight jiggle. A toothpick inserted into the brownie portion should come out with a few moist crumbs.
