Start by preheating your oven to 350°F or 175°C. Proper preheating ensures even baking from the start. While the oven heats, line a square baking pan with parchment paper. Leave a slight overhang on the sides so you can easily lift the brownies out later.
Lightly grease the parchment paper as well. This extra step prevents sticking and ensures clean edges when slicing.
Step 2: Melt the Chocolate and Butter
In a heatproof bowl, combine the bittersweet chocolate and butter. Melt them together using either a double boiler or microwave.
If using a microwave, heat in short bursts of about 20 to 30 seconds, stirring between each interval. This prevents the chocolate from burning. Continue until the mixture is smooth and fully melted.
The mixture should look glossy and thick. Stir it well to ensure the butter and chocolate are completely combined.
Step 3: Add Sugar and Flavor Enhancers
To the warm chocolate mixture, add the granulated sugar, salt, and instant espresso powder. Stir everything together thoroughly.
At this stage, the mixture will look slightly grainy due to the sugar. That is completely normal. The espresso powder does not make the brownies taste like coffee but instead intensifies the chocolate flavor.
Step 4: Incorporate the Eggs
Add the eggs one at a time, mixing well after each addition. This step is crucial for creating the chewy texture.
As you mix, you will notice the batter becoming smoother and slightly thicker. The eggs help emulsify the mixture, giving the brownies structure and richness.
Take your time here and mix until fully incorporated, but avoid overmixing.
Step 5: Sift and Add Dry Ingredients
In a separate bowl, sift together the flour and cocoa powder. Sifting helps remove lumps and ensures even distribution.
Gradually add the dry ingredients into the chocolate mixture. Stir gently using a spatula until just combined.
Do not overmix the batter at this stage. Overworking the flour can lead to tough brownies instead of soft and chewy ones.
Step 6: Fold in White Chocolate Chips
If using white chocolate chips, fold them into the batter now.
These add pockets of sweetness and contrast beautifully with the rich dark chocolate base. Distribute them evenly throughout the batter for consistent bites.
Step 7: Transfer Batter to the Pan
Pour the batter into your prepared baking pan. Use a spatula to spread it evenly, making sure it reaches all corners.
Tap the pan lightly on the counter to remove any air bubbles. This helps create a dense and uniform texture.
Step 8: Bake to Perfection
Place the pan in the preheated oven and bake for about 25 to 30 minutes.
The brownies are done when the edges are set and a toothpick inserted in the center comes out with a few moist crumbs. Avoid waiting for a completely clean toothpick, as that can lead to overbaked brownies.
The top should look slightly crackly, which is a signature characteristic of well made brownies.
Step 9: Cool Before Slicing
Remove the brownies from the oven and allow them to cool completely in the pan.
This step is essential. Cutting them too early can cause them to fall apart. As they cool, they firm up and develop their chewy texture.
Once cooled, lift them out using the parchment overhang and slice into squares.
